How to tell if a watermelon is ripe?

Here are a few tips for picking out a ripe melon for these watermelon recipes. There’s really nothing worse than an unripe, flavorless version of this fruit. Of course, shopping when watermelon is in season is important! Here’s how to get a ruby red, sweet melon:

  • Look for a lighter spot where the watermelon rested in the field. It’s called a field spot. If the field spot is white, it’s unripe: if the spot is yellow, it’s ripe.
  • The melon should feel heavy. The watermelon should feel very heavy, which means there’s a lot of juice inside. This is a little subjective, so the field spot is a little easier of an indicator.

Is there anything more refreshing than a watermelon salad? This one features salty feta, cucumber, fresh basil, and lemon zest.


Ingredients

  • 8 cups cubed ripe seedless watermelon (1 8-pound watermelon)
  • 2 organic mini cucumbers or ½ English cucumber (1 cup sliced)
  • 2 ounces feta cheese crumbles
  • Zest of 1/2 lemon
  • 4 basil leaves
  • Sea salt, for garnish

Instructions

  1. Chop the watermelon into cubes. Slice the cucumbers (if using an English cucumber, slice it into half moons). Chop the basil. Zest the lemon.
  2. Arrange the watermelon and cucumbers on a platter. Sprinkle with feta crumbles, lemon zest, and sea salt. Taste and adjust flavors as desired. (If you’d like, you can add freshly ground black pepper or a drizzle of olive oil.) Serve immediately. If making ahead, refrigerate the cubed watermelon separately: it releases a lot of water after it is cut. Then assemble the salad directly before serving.

You can even pour it into beer for a refreshing spin on the spritz (yes, it’s a thing!).

More about Aperol

Aperol is a Italian aperitif, a liquor designed for sipping before a meal. It was invented in Padua, Italy in 1919 by brothers Luigi and Silvio Barbieri. The company that sells Campari, Gruppo Campari, bought Aperol in the 1990s.

Aperol is bright orange in color and it has a sweet, citrusy flavor. It’s more approachable than its cousin liqueur Campari, which is bright red and extremely bitter (see Campari vs Aperol). It’s great in the popular spritz, or even just watered down with soda water.

Compared to other liquors, Aperol is mid-priced. A 750 ml bottle costs $20 to $35.

Description

The classic Aperol spritz is worth the hype! It’s light and bubbly, with hints of citrus and herbs: one of the most refreshing mixed drinks of all time.


Ingredients

  • 2 ounces (4 tablespoons) Aperol, chilled
  • 3 ounces (6 tablespoons) Prosecco or other sparkling wine, chilled
  • 1 ounce (2 tablespoonssoda water
  • Ice (try clear ice!)
  • For the garnish: orange wedge, a straw if you like

Instructions

  1. Add the Aperol to a glass filled with ice and stir. Top with the sparkling wine and soda water.
  2. Squeeze in the orange wedge and stir gently, then serve. Serve with a straw to minimize dilution!

Once you’ve baked up a pan of muffins: what’s the easiest way to store them? Review these guidelines on how to store these muffin recipes:

  • 1 day: Leave the muffins on a cooling rack and cover with a clean, dry dish towel. This helps to retain the fluffy, moist interior and the crunchy topping (if applicable).
  • Up to 4 days: Place a paper towel in the bottom of a sealed container, then place the muffins in and place a paper towel on top. The paper towels absorb any moisture, which helps to retain the topping texture.
  • Longer than 4 days: Freeze these muffins in a sealable container and store up to 3 months.

This is the best blueberry muffins recipe! The muffins come out tall, fluffy and golden, with an irresistibly sweet fruity flavor.


Ingredients

  • 1 ½ cups fresh blueberries
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 2 eggs
  • ¼ cup honey
  • ½ cup vegetable oil
  • ½ cup Greek yogurt (or sour cream)
  • ½ cup milk
  • 1 teaspoon apple cider vinegar
  • Turbinado sugar, for topping

Instructions

  1. Preheat: Preheat the oven to 400 degrees Fahrenheit. Spray a standard 12-cup muffin tin with cooking spray or add muffin cup papers.
  2. Wash and dry the blueberries. 
  3. Make the batter: In a large bowl, whisk the all-purpose flour, sugar, cinnamon, nutmeg, baking powder, and salt. In a separate medium bowl, whisk the eggs, then whisk in the honey, vegetable oil, yogurt, milk and apple cider vinegar until smooth. Stir the wet ingredients into the dry ingredients with a spatula until a thick, smooth batter forms. Fold the blueberries into the batter with a spatula. 
  4. Scoop the batter evenly into the muffin cups: the cups will be full to the top, using about a heaping ¼ cup per muffin. Sprinkle the tops with turbinado sugar (or additional granulated sugar).
  5. Bake: Bake the muffins for 18 to 20 minutes, until puffed and golden and a toothpick comes out clean. Cool for 5 minutes in the pan, then transfer to a rack to cool fully, about 1 hour. Eat immediately or they taste even better the next day after storage in a sealed container at room temperature. Store up to 4 days in a sealed container at room temperature, refrigerated up to 1 week or more (allow to come to room temperature before serving), or frozen up to 3 months.

Description

This blueberry crumble recipe is a favorite! The nostalgic summer dessert stars a sweet tart fruit filling topped with buttery crumbles.


Ingredients

  • 4 cups blueberries (fresh or frozen*)
  • 1 cup granulated sugar, divided
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon, divided
  • ¼ teaspoon allspice
  • ½ teaspoon lemon zest
  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 7 tablespoons unsalted butter, melted (or vegan butter)

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Make the filling: In a medium bowl, mix the blueberries, ½ cup sugar, cornstarch, ½ teaspoon cinnamon, allspice, and lemon zest. Pour into a round 9-inch pie pan, 9 x 9 inch baking dish or 7 x 11 baking dish.
  3. Make the topping: In a medium bowl, add the remaining ½ cup sugar, ½ teaspoon cinnamon, flour, baking powder and kosher salt. Mix together with a fork. Pour in the melted butter while mixing with the fork until a crumbly mixture forms. Use your fingers to sprinkle the crumbles evenly over the filling.
  4. Bake: Bake for 45 to 50 minutes until the top is evenly golden brown and the filling is bubbly. Cool for 1 hour, then serve. You can leave it out on the counter for up to 1 day (covered, at night) so the topping can stay crisp. After 1 day, refrigerate any leftovers. It also freezes well for several months in a sealed container; reheat it in a 350 degree oven until bubbly.

Notes

*No need to defrost frozen berries before using. Note that storebought frozen berries can be a little more tart than fresh berries; if desired, add a hint more sugar to the filling (to taste).

30 Easy Summer Desserts: Strawberry Pie & More!

This strawberry pie recipe has incredible flavor: an elevated take on the classic! Serve it to impress and everyone will ask for the recipe.


Ingredients

  • 1 pie crust*: Homemade Pie Crust, purchased crust, or Vegan Pie Crust
  • 2 pounds fresh strawberries
  • ⅓ cup granulated sugar (or coconut sugar)
  • ⅓ cup honey (or agave syrup or maple syrup for vegan)
  • ½ tablespoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 pinch kosher salt
  • ¼ cup cornstarch**
  • ¼ cup water
  • Homemade whipped cream, to serve

Instructions

  1. Make the crust: Follow the directions in the Homemade Quiche Crust recipe to make the dough and shape it into a 9-inch pie plate. You can do either a fork pressed edge or a fluted edge. Then freeze the crust in the pie pan for 30 minutes (this helps to avoid shrinkage; you can skip the freezing portion for a purchased pastry crust).
  2. Preheat the oven to 375 degrees Fahrenheit. 
  3. Blind bake*: Remove the dough from the freezer. Crumble a sheet of parchment paper, then place it gently on top of the crust. Fill the dough with pie weights (we used two sets of these), dry beans, or dry rice. Bake for 15 minutes, then carefully remove the parchment and weights and bake an additional 14 to 15 minutes until the bottom is golden brown (note that the timing may vary if you use store-bought pastry dough). Remove from the oven and allow the crust to cool completely before adding the strawberry filling. To cool it quickly, you can very gently slide it into another pie pan of the same size and place it on a cooling rack; this should cool it in about 10 to 15 minutes while you make the filling. (Or, the baked crust can be wrapped in plastic and stored in the refrigerator for 2 days.)
  4. Make strawberry filling: Wash, destem and quarter the strawberries lengthwise, cutting very large berries into smaller pieces. Take 1 cup of the quartered strawberries (reserve the rest), place them in a bowl, and smash them with a fork until each one is mashed. Add the smashed berries and their juices to a large saucepan. Add the sugar, honey, vanilla, cinnamon, and salt. Bring to a simmer over medium-low heat and cook until the sugar is dissolved and the mixture is bubbling, about 2 to 3 minutes.
  5. Then in a small bowl, combine the cornstarch with ¼ cup water and whisk until dissolved. Add the cornstarch mixture to the saucepan and cook, stirring often while it bubbles, for 1 to 2 minutes until very thick and glossy. Turn off the heat. Add the remaining fresh strawberries to the pan and turn with spatula until they are fully coated with the very thick sauce. 
  6. Immediately scoop the strawberry filling into the cooled pie crust. Use clean fingers to arrange the strawberries in the top layer (you may need to flip some over to make it look nice). Allow to cool in the refrigerator for 2 hours before serving until it sets. Serve topped with homemade whipped cream. Lasts up to 3 days refrigerated.

Notes

*Blind baking the pie crust shrinks it a bit. For a larger puffy crust, you can make 1.5 times the recipe and cut scraps to reinforce the sides. Go to How to Blind Bake a Pie Crust.

**Arrowroot may work as a substitute, but we have not tested it. Try at your own risk!

Description

Roasted garlic is sweet and caramelized, and makes your kitchen smell irresistible! Here’s an easy method for how to roast garlic. 


Ingredients

  • 2 to 3 garlic heads*
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. 
  2. Cut off the top 1/4-inch of each head of garlic: try to have a cut edge on each clove so you can pop them out after roasting. Peel away the paper on the outside of the head (the bottom stem will keep the cloves together). Place the garlic heads on a sheet of aluminum foil. Drizzle them with olive oil and season them with salt and pepper. Close up and seal the packet. 
  3. Roast the garlic about 45 minutes to 1 hour, until a clove in the center is golden in color and soft when pierced with a sharp knife (and your kitchen smells incredible!). Cool until able to handle, or store refrigerated for up to 2 weeks. To remove the garlic, squeeze the bottom of the clove so it pops out the top. Spread on crusty bread, use in sauces and salad dressings, or in mashed potatoes.

25 Zesty Lemon Recipes

Description

This easy lemon bars recipe (aka lemon squares) has all of Grandma’s secrets! A zingy custard tops a thick shortbread layer.


Ingredients

For the crust

  • 2 cups [280 g] all-purpose flour
  • 1 cup (2 sticks) unsalted butter, melted
  • ½ cup [60 g] powdered sugar
  • ¼ teaspoon fine salt
  • 1 teaspoon vanilla extract

For the lemon layer

  • 4 eggs, beaten
  • 2 cups [400 g] granulated sugar
  • ¼ cup all purpose flour
  • 1 teaspoon baking powder
  • ½ cup fresh lemon juice (3 large or 4 medium lemons)
  • 1 tablespoon finely grated lemon zest

Instructions

  1. Preheat and prepare the pan: Preheat the oven to 350°F. Butter a 9 x 13-inch baking dish, then line it with parchment paper. Allow two edges to extend outside the pan to allow for easy removal. 
  2. Make the crust: Mix the flour, melted butter, powdered sugar, salt and vanilla extract in a bowl. Pour crumbles into the pan, spreading them out evenly with your fingers. Press them into the pan in an even layer, using the back of a measuring cup to pack it flat. 
  3. Bake the crust: Place the pan in the oven and bake 20 to 23 minutes until lightly golden brown. (You can bake the crust first and let it sit while making the filling, or mix up the filling while the crust bakes. In the second case, keep the eggs, dry ingredients, and lemon in separate bowls and whisk together once the crust is out of the oven).
  4. Make the filling: Whisk the eggs, then whisk in the granulated sugar, flour, baking powder, lemon juice, and lemon zest until light and fluffy. Prick the baked crust gently with the tines of a fork and allow the crust to cool at least 5 minutes. Then pour the filling over the warm crust.
  5. Bake the bars: Place the pan in the oven and bake for 10 minutes. Remove the pan and rotate it, then then bake 8 to 10 minutes more until lightly golden on top. It’s ok if it gets unevenly browned or if the top has small bubbles because it will be covered by the powdered sugar topping.
  6. Chill: Allow the bars to cool to room temperature (about 1 hour), then transfer to the refrigerator for at least 2 to 3 hours to firm up (overnight is even better).
  7. Top, slice and store: Sift powdered sugar over the top of the bars. Cut them into 24 squares, wiping off the knife after each cut to get a clean cut. Store bars refrigerated with parchment paper between the layers for up to 2 weeks. (Note that when sitting at room temperature, the powdered sugar topping can melt into the lemon filling, so you may need to refresh with new powdered sugar before serving leftovers.) You can also freeze lemon bars for up to 3 months without the powdered sugar topping, with parchment paper between the layers.

Description

This baked salmon and asparagus recipe is the definition of easy healthy dinner! Throw it all on a sheet pan with lemon, and the flavor is unreal.


Ingredients

  • 1 pound thin asparagus*
  • 1 pound salmon, wild caught if possible
  • 2 tablespoons olive oil
  • Kosher salt and fresh ground black pepper
  • Lemon
  • Minced fresh herbs (like chives, mint or thyme), for garnish

Instructions

  1. Allow the salmon to come to room temperature.
  2. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with foil.
  3. Trim the asparagus. Place it on the baking sheet and toss it with 2 tablespoon olive oil (this also oils the foil). Sprinkle with ½ teaspoon kosher salt and fresh ground black pepper.
  4. Pat the salmon dry and place it on the foil. Drizzle it with 1 teaspoon olive oil. Sprinkle the salmon with ½ teaspoon kosher salt and fresh ground black pepper. Place asparagus around the salmon. Slice the lemon into wheels and place them on top of the asparagus (but not the salmon). Squeeze juice from the two ends of the lemon onto the tray. Then add the chopped fresh herbs on top of everything.
  5. Bake 9 to 12 minutes until the asparagus is tender at the thickest part, and the salmon is just tender and pink at the center (the internal temperature should be between 125 to 130F in the center for done, or 10 degrees less if you’re broiling). If the salmon is done before the asparagus (the asparagus is thick), remove it from the tray and continue cooking just the asparagus until tender.

Notes

*Thin asparagus is best, so try to find the thinnest you can when shopping. If all you can find is thicker asparagus, you may need a little longer to roast (up to 15 minutes). Just remove the salmon from the tray if it’s already done and finish the asparagus by itself.

Description

This easy fruit crisp recipe can be used with any fruit! It has a crunchy topping of almond flour and oats, and the filling is perfectly sweetened. 


Ingredients

For the filling

  • 5 cups fresh berries or sliced summer fruit (blueberries, strawberries, raspberries, blackberries, sliced peaches, etc) 
  • 1 tablespoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons arrowroot powder or cornstarch
  • ¼ teaspoon kosher salt

For the topping

  • 5 tablespoons cold unsalted butter
  • 1 cup rolled oats
  • ½ cup coconut sugar or granulated sugar
  • ½ cup almond flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven to 350F. Lightly grease an 8-inch pie plate or a cast-iron skillet.
  2. Make the filling: In a large bowl, toss together the fruit, vanilla, lemon juice, arrowroot and salt until well coated. Transfer the filling to the prepared pie plate.
  3. Make the topping: Wipe out the bowl, then chop the butter into small pieces and add it to the bowl, with the oats, coconut sugar, almond flour, vanilla, and salt. Pinch it all together with your fingertips until it forms a shaggy, sandy dough. Sprinkle the topping evenly over the filling.
  4. Bake for about 45 minutes, or until the filling bubbles and the topping is golden brown. Allow to cool at least 15 minutes.
