Here’s a Christmas brunch idea from the two of us. Alex made these biscuits for a biscuit and gravy cook-off we had with his family a few weeks ago. First let me say, I had never heard of biscuits and gravy until I moved to Indiana. They are not a “thing” in Minnesota, and I was very confused by the concept (you eat that for breakfast?). Alex’s stepfather Joe is a tried and true biscuits and gravy aficionado, so Alex had idea of battling him with a vegetarian gravy. Against Joe’s biscuits from a tube and white gravy with sausage, Alex came to the plate with brown mushroom gravy and our best homemade biscuits. It was a hard sell with meat loving folk, but Alex turned out to be the hands-down winner! The comments on each ballot mainly pointed to the homemade biscuits, so, we thought we’d share them with you (sans gravy for now).

Making our homemade yogurt biscuits

These yogurt biscuits are light, fluffy, and just buttery enough, with a bit of Greek yogurt to keep them moist (a trick we learned from The Fauxmartha). They’ve got some whole wheat flour for some added flavor and depth. The main trick to making these homemade biscuits is to freeze the butter before making the dough! Then you can grate the frozen butter into the dough, which helps it to be evenly incorporated. You can also simply refrigerate the butter and cut it into small pieces when mixing up the dough. After adding the dries and wets together, you’ll roll out the dough and fold it over several times: this is what creates those lovely layers in the dough.

For our best homemade biscuits, we cut them out with holiday cookie cutters to make them festive for the holidays! Of course if it’s not the holidays, simply use a circular biscuit cutter. Then we paired these Greek yogurt biscuits with a cranberry orange jam and it was the perfect match. Here’s the cranberry jam recipe!

Homemade Yogurt Biscuits

Ingredients

Scale
  • 2 ¼ cups all-purpose flour
  • ¾ cup whole wheat flour
  • 1 tablespoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 8 tablespoons cold, unsalted butter (frozen for 1 hour if possible)
  • ½ cup Greek yogurt
  • 1 ¼ cup milk
  • Chia cranberry jam, to serve

Instructions

  1. Freeze the butter for about 1 hour (optional, but makes for easy incorporation into the dough).
  2. Preheat oven to 450°F.
  3. In a bowl, combine 2 ¼ cups all-purpose flour, ¾ cup whole wheat flour, 1 tablespoon baking powder, ¾ teaspoon baking soda, and 1 teaspoon kosher salt.
  4. Grate the frozen butter (or cut refrigerated butter into small pieces), then cut it into the dough using a pastry blender until thoroughly combined. Add ½ cup Greek yogurt, and then stir in 1 ¼ cup milk until just combined.
  5. Turn the dough onto a floured surface and add a sprinkle of flour until just barely sticky. Gently roll out the dough to ½-inch thick; fold the dough in half and then in half again. Roll the dough out again, and then fold the same way again to create layers. Take care not to overwork the dough. Roll it out a final time to 1/2-inch thick, then let the dough rest for 5 minutes.
  6. Use a biscuit cutter or cookie cutters to cut out the biscuits and place them about 1 inch apart on parchment paper on a baking sheet. Bake for 12-14 minutes, until golden.

  2. I love biscuits and jam. And I have yet to try chia jam but have them on my list to make. Cranberries are a nice spin too, as I usually just see them used for holiday cranberry sauce. Congrats on the family competition win! ;-)

  3. Those biscuits! That jam! I want them all. Sidenote: I grew up with sausage gravy on holidays, made from my dad’s secret recipe. I’m the sausage gravy maker now, though this is the only time I eat sausage. I’m wayyy interested in Alex’s version!

    1. Did your dad share the secret recipe or did you have to come up with one on your own? My portabella gravy is decent, but not quite shareworthy yet… something special about sausage!
