It’s beyond simple to make cottage cheese toast: it’s one of those un-recipe recipes. Really it’s more of a reminder than an idea! Grab cottage cheese and use it as a savory topping for a toast! It’s as simple as that. Here are a few tips for piling on your toppings:

  • Add a hint of salt or garlic salt. Most cottage cheese is pretty salty, but we like our toasts with a small pinch of salt or garlic salt to bring out the flavors.
  • Assemble right before eating. If you’re using this as a desk lunch at an office, don’t make it in advance if you can help it. Bring the components and assemble right before eating, so it doesn’t get soggy.

Because this is a lunch idea, we tended towards savory options versus sweet ones like fruit. But of course you can go with fruit if you love cottage cheese and fruit, or turn it into a breakfast idea. Here are a few categories of topping ideas:

  • Smoked salmon: This one is our favorite: it’s packed with both flavor and protein! Add capers, red onion and dill for a Scandi lox vibe
  • Tuna: Canned tuna is also great and filling
  • Prosciutto: Add prosciutto is another savory protein-filled option; you can also pair it with something sweet like melon or peaches
  • Hard boiled eggs: Eggs add another great pop of protein! Try Stovetop Hard Boiled Eggs or Steamed Hard Boiled Eggs.
  • Tomato: Make sure you’ve got ripe tomatoes!
  • Avocado: Avocado cottage cheese toast is very filling
  • Cucumber and radishes: Make sure to salt them! It would also be great with pickled radishes
  • Fresh herbs: Any sort of fresh herbs add great flavor (chives, thyme, dill, basil, etc)

Ingredients

Scale
  • Slices of bread
  • ½ cup cottage cheese per toast, or use Whipped Cottage Cheese
  • For the salmon toast: Smoked salmon, capers, red onion, fresh dill
  • For the tomato toast: Ripe tomatoes, garlic salt, chives or green onion, olive oil
  • For the cucumber toast: English cucumber, radishes (or pickled radishes), garlic salt, sesame seeds
  • Other ideas: Avocado, canned tuna, prosciutto, hard boiled eggs, fresh herbs, pickled vegetables, etc.

Instructions

  1. Toast the bread.
  2. Salmon toast: Spread cottage cheese on the toast and sprinkle with a small pinch salt. Top with the smoked salmon, drained capers, sliced red onion and fresh dill sprigs. Add 1 grind fresh black pepper.
  3. Tomato toast: Spread cottage cheese on the toast and sprinkle with 1 shake garlic salt. Top the toast with the sliced tomatoes, chopped chives or green onion, drizzle of olive oil, a small pinch salt and fresh ground pepper.
  4. Cucumber toast: Spread cottage cheese on the toast and sprinkle with 1 shake garlic salt. Top the toast with sliced English cucumber and radishes, drizzle of olive oil, sesame seeds, a small pinch salt and fresh ground pepper.

  1. This sounds fantastic – glad I’m not alone in thinking cottage cheese on toast would be yummy- been eating this really good cultured cottage cheese from Whole Foods- 6% milk fat- and found I actually prefer it to cream cheese
