Breakfast sandwich

Need a great idea for quick mornings? Try this basic yet beyond satisfying Easy Breakfast Sandwich! There’s nothing better than fluffy eggs perched on a toasted English muffin with gooey cheese. The kicker for this one? A slather of smoky mayo brings an irresistibly savory undertone: and you can even skip the bacon. (Or not, if you’re a bacon lover!) Here are our tips for building a great and efficient breakfast sandwich.

Ingredients in this breakfast sandwich

A breakfast sandwich can be made in a myriad of ways: of course, some fast food chains think they have a monopoly on the concept. But there’s a load of creativity that can be brought to this basic idea. Our goals for this breakfast sandwich recipe? Make it quick enough to whip up on a rushed morning, but delicious enough to taste hearty and decadent. (We’ve got a healthy spin if you prefer that: keep reading!)

The best part of this concept is the harmony of all the elements. Here’s what you’ll need for this breakfast sandwich recipe:

  • Eggs
  • English muffin
  • Seasonings: butter, salt, garlic powder, chives
  • Cheddar cheese
  • Tomato
  • Smoky mayo (mayonnaise, hot sauce, smoked paprika)

Tips on cooking the sandwich

The eggs in this breakfast sandwich are very hearty and make for a sandwich that’s full to the brim! If you prefer, you can use just one egg and half the seasoning ingredients. But using two eggs makes it a very filling morning meal. Here are a few notes about cooking the sandwich:

  • You’ll cook the eggs in a thin circle, then fold it twice. Folding the eggs up and over each other gives height and texture to the sandwich.
  • Then, melt the cheese by covering the pan. It should take less than a minute: the timing depends on the thickness of the cheese.
  • While you cook the eggs, make the smoky mayo. It’s optional, but adds massive smoky flavor to this sandwich. Grab a bottle of smoked paprika: you’ll be glad you did.
  • Bacon is optional! If you’re a bacon lover, cook up a bit of bacon to add here (or use vegan bacon). We eat mostly vegetarian or pescatarian, so we typically don’t add it — plus, it makes it quicker!

Variation: healthy breakfast sandwich

Want to make a healthier version of a breakfast sandwich? This recipe is already healthier than most, since it doesn’t include bacon or breakfast sausage! But here are a few ideas on how to make it an even lighter way to start the day:

  • Use 1 egg instead of two. This cuts some calories (though of course, it’s less filling!).
  • Add sautéed spinach. Sauté a bit of spinach before adding the eggs.
  • Use a sprinkle of feta instead of a slice of cheddar cheese. This helps to reduce calories but still adds big flavor.

  • Yield: 1 sandwich 1x

Description

This 5 minute breakfast sandwich recipe makes mornings easy! Fluffy, cheesy eggs pair perfectly with a slather of smoky mayo.

Ingredients

Scale
  • 1 English muffin
  • 2 eggs*
  • 1 pinch each kosher salt and garlic powder
  • ½ tablespoon butter
  • 1 teaspoon chopped chives
  • 1 slice cheddar cheese
  • 1 slice tomato
  • 1 tablespoon mayonnaise
  • ½ teaspoon hot sauce (like Cholula)
  • ½ teaspoon smoked paprika

Instructions

  1. Toast the English muffin.
  2. Meanwhile, whisk the eggs and add the salt and garlic powder. Add the butter to a small nonstick skillet over medium heat. Pour in the eggs and sprinkle the chopped chives on top. Cook, without flipping, for about 2 minutes until eggs are mostly set. Rotate the pan to ensure all of the egg gets cooked.
  3. Once the eggs are mostly set, use a spatula to fold them in half, then in half again to make a wedge. Add the cheese slice and cover pan. Cook 30 seconds to 1 minute until cheese is melted.
  4. While the eggs cook, make the smoky mayo: stir together the mayonnaise, hot sauce, and smoked paprika.
  5. Spread smoky mayo on the toasted English muffin. Add the eggs and tomato slice (seasoned with a pinch of salt), and serve immediately.

Notes

*Feel free to add cooked bacon or vegan bacon as a classic breakfast sandwich addition.
