It was so easy and tasty. I wouldn’t have thought to add vanilla, but it really adds to the flavor. I didn’t have any citrus fruits to zest so I added 1/2 tbsp of lemon juice. I really liked the texture of the topping. I do think using regular oats vs quick oats made a difference. I will be making this again!! I might even try adding rhubarb to the strawberries for a twist.
