Want to cook rice and got a pressure cooker handy? Try our Instant Pot jasmine rice! Jasmine rice is perfect for pairing with curry recipes and stir fries, and what better tool to cook it than an Instant Pot? Alex and I got rid of our rice cooker in favor of a pressure cooker, since it’s so much more versatile. And are we glad we did! Not only can we cook basics like whole grains and veggies, it makes meals like soups and stews, too. But of course…you’re here for the rice!

What’s jasmine rice?

Jasmine rice is a long-grain variety of rice grown mostly in Thailand, Cambodia and Vietnam. Because of that, it’s best paired with Southeast Asian style curries, like our Coconut Shrimp Curry. The flavor is mild and sweet, with a flavor of popcorn. It’s very similar to basmati rice, but it’s shorter and a little stickier. Alex and I love jasmine rice: its aromatic flavor is perfect for curries and stir fries. (What’s the difference? See more at Basmati vs Jasmine Rice.)

How to cook Instant Pot jasmine rice

It’s so easy to make Instant Pot jasmine rice! It’s similar to our method for pressure cooker white rice and brown rice. Here are the basic steps (or go right to the recipe below):

  • Add 1 part jasmine rice and 1 part water. In this recipe, we used 2 cups rice and 2 cups water.
  • Pressure cook on High for 8 minutes (white rice) or 20 minutes (brown rice). Keep in mind it takes about 5 minutes to “preheat” first.
  • Natural release for 10 minutes. Set the timer for 10 minutes and then release the steam in the pot.

There you have it: perfect, fluffy jasmine rice in just 15 minutes (for white rice)! It’s easiest to find white jasmine rice, but if you can find it, brown jasmine rice is even more nutrient dense.

White rice vs. brown rice

If you can find it, brown jasmine rice has even more nutrients than white! It’s a little more unique than white, but many major brands have a variety. Brown rice has more vitamins, minerals and beneficial compounds because it is less processed than white rice. The tradeoff is visual effect: there’s nothing like white rice to set off food (like the curry above). Here’s a breakdown:

  • Brown rice is less processed = more nutrients. White rice has its hull, bran and germ removed. Brown rice has only the hull removed, and keeps the nutrient-packed bran and germ. Because of this, it retains the nutrients that white rice lacks such as vitamins, minerals, and antioxidants.
  • Brown rice has more fiber. 1 cup of cooked white rice has 0.6 grams fiber, but 1 cup cooked brown rice has 3.2 grams of fiber, 13% of your daily need. (Source)

Instant Pot Jasmine Rice

Instant Pot jasmine rice turns out perfectly fluffy and tender! Using a pressure cooker is a great hands-off method for cooking rice.


Ingredients

  • 2 cups white or brown jasmine rice
  • 2 cups water
  • Kosher salt

Instructions

  1. Rinse the rice. Then add the rice and water to the Instant Pot and stir. Lock the lid of the Instant Pot. Place the pressure release handle (vent) in the “Sealing” position.
  2. Cook on high pressure for EITHER: 8 minutes (white rice) or 20 minutes (brown rice): Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time. Note that it takes about 5 minutes for the pot to “preheat” and come up to pressure before it starts cooking. (During cooking, avoid touching the metal part of the lid.)
  3. Natural release for 10 minutes: After the Instant Pot beeps, set a timer and wait for 10 minutes to let the Instant Pot naturally release pressure. Then vent any remaining steam by moving the vent to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. (The pressure indicator in the lid may drop on its own during this time, meaning that there is no remaining steam in the pot.)
  4. Open the lid and fluff the rice with a fork. Stir in kosher salt to taste. Serve immediately, or store in the refrigerator for 3 to 4 days. (Note: When reheating leftovers, it’s helpful to add a tiny bit of water and then reheat on the stovetop or in the microwave — adding the water helps to rehydrate the rice so it’s not dry!)
